Sajouna was built from need and now it is an aspiring business. Sajouna produces Saj bread, a cultural and historical element of the Lebanese cuisine, in a revolutionized way. A product that relies on manual heaviness was turned into automated machinery. Saj bread is almost a product in every Lebanese household; loved and consumed by many. However, its sole means of production has been manual. This presented numerous obstacles that, speaking long term and in terms of sustainability, would present challenges to the continuity of such an integral part of our identity. Sajouna has been running for 13 years and its market has been growing in terms of sales as well as diversification of products. Therefore, the ultimate mission and purpose of Sajouna is to keep on providing high quality markouk Saj bread in the Lebanese market with production that follows standardized protocols and recipes. This was established and coupled with continuity as the machine has proven to be successful. The business has great potential. For us, it is the way forward: the automation of bread production is the default progression of this industry.
